Gary Wallach, beverage director and partner at Lindens in New York, knows a thing or two about serving refreshments. Below are Wallach's top tips for serving your own "AN" cocktail.
1. Don't skimp on glassware. Zero Defense cocktails should be served in the same style as liqueurs. So get yourself a nice coupe, why not?
2. Tea can be just as complicated as any other alcoholic drink. If you need to add a base but can't find anything fancier than this new non-alcoholic distillation, try a strong tea base.
3. Don't miss the party. Even if served with soda, punch is always better. This way, you don't have to keep making one drink at a time and you can enjoy the company of your friends and family.
4. Jewelry can make a big impression. Spend time creating decorative and useful garnishes that don't distinguish cocktails from liqueurs.
5. Balance is everything. This is not your college party. Treat this drink with the same respect you would treat a martini.
6. Use your freezer. Ice to the bartender is like fire to the chef. Make sure your ice cream is beautiful and change the simpler mixture.
No Alcohol, No Problem: How Soft Drinks Are Changing the Beverage Industry
Another New York restaurant, Alice, known for its seafood from the Italian coast, regularly surprises customers with its menu of delicious drinks and refreshments.
Wael Dik, Alice's Beverage Director and Partner, shares his six tips with GMA for making NA drinks at home.
1. Don't try to copy cocktail recipes and throw away the alcohol. It is about making a drink that stands on its own without persistence, without losing the integrity of the drink.
Additionally, Dick emphasizes that "a good mocktail mixes delicious, flavorful ingredients and makes it easy to ditch the booze during Dry January or other destinations to cut booze out of your routine."
2. Invest in unprotected alternatives . It's a great addition to the moment with additional flavors and notes that mimic spirit. Some examples are Seedlip, Prima Pavé (premium non-alcoholic sparkling wine) or Pathfinder.
3. Use other natural ingredients as a base. If you can't afford a non-alcoholic base, Dick recommends trying mashed potatoes and citrus (lemon or lime) to ensure fullness and flavor.
4. The sweetener is key. Add sweet syrups like maple syrup or agave syrup to sweeten your non-alcoholic shake.
5. Add a fizz. Soda or ginger ale can be used for an extra kick and a nice kick at the end of the recipe.
6. Create your own ingredients. Dick suggests making homemade concoctions with your favorite herbs, roots, or leaves. "This will balance out your AN shake and add flavor and texture to your signature mix," he says.
Below are three mocktail recipes to serve at your next gathering or just try at home.
One of Dick's mixes uses a hemp-based fermented liquid for a complex and earthy AN cocktail.
1 ounce Pathfinder (0% ABV)
0.75 ounces date molasses
0.25 ounces of wine must be syrup
0.5 ounces fresh lemon juice
rose water splash
Preparation : Mix all the ingredients in a cocktail shaker with ice and shake until cold. Pour ice into a Rocks glass and garnish with a lemon wedge. Finish your makeup with rose water.
Wallach says the drink is typically made with Empress 1908 gin and pisco, along with lavender syrup, Concord grape jam, lemon, and egg whites for a sparkling effect.
“To make this dry, powerless January friendly, we swapped out the alcohol for Seedlip non-alcoholic distilled spirit, replaced Seedlip Garden with gin [for] a great gin taste, and Seedlip Grove with pisco [for] a rich gin taste. sweet and flowery.” dry finish." ", – he said.

This non-alcoholic version of the cocktail replaces the Seedlip Grove with Malfy Gin to add the necessary gin flavor.

Decoration: Chamomile flowers placed on cucumber slices.
Preparation : Place all the ingredients in a small form. Fill a glass with ice cubes and shake vigorously. Strain twice into an open coupe glass and garnish.
